
What’s Needed for the Recipe
To make the paella, you will need:
- 300 grams of rice
- A 400-gram can of chopped tomatoes with garlic
- 400 grams of frozen seafood mix
- 900 milliliters of chicken stock
- One chopped onion
- A tablespoon of olive oil
- A teaspoon each of dried thyme and hot smoked paprika
- Three tablespoons of white wine or dry sherry
- Half a lemon – juiced
- Half a lemon – sliced into wedges
- A handful of roughly chopped parsley
Preparing the Paella
Start by heating up the oil in a wok or a frying pan. Fry the chopped onion until it’s soft for about five minutes. Stir in the rice, paprika, and thyme with a splash of sherry. Once the liquid evaporates, mix in the tomatoes and add the chicken stock. Season to taste with salt and pepper! Stirring occasionally, cook uncovered for fifteen minutes until the rice is tender and some liquid is left.

Add the Seafood Mix
It’s time to stir in the seafood mix and cover the pan with its lid. Let everything cook for another five minutes or until you’re sure that the seafood is tender and cooked through. Once the paella is cooked, scatter the parsley and squeeze the lemon juice over the top of the dish. Serve this dish with extra lemon wedges! Don’t hesitate to take your own spin on this recipe by adding peas, chorizo, or omitting the sherry. The flavor will still be amazing!
